Xanthan gum is a kind of polysaccharide. It is light yellow to off white powder, soluble in water, insoluble in organic solvents.
It can increase the viscosity and thickness of a liquid. Xanthan gum is stable in temperature between -4ºC and 80ºC, and pH values between 1.5 and 13. Its molecular formula is C8H14Cl2N2O2, and CAS number is 11138-66-2
